Browsers in general tend to be memory hogs. After browsing around in Firefox for several hours, I can end up well over 100MB of real RAM for that as well. I'm not sure what else is eating up your RAM. It's really an application-by-application issue, not an OSX issue. Some apps are RAM-intensive (by necessity or because of sloppy programming), some are nice and small. At the moment, I have two applications (a Java IDE and a web editor) eating up 200MB RAM each, but the rest of the apps I'm running are between 25-40MB each. If I killed off these two two biggies, I'd be well below 512MB of RAM usage. The amount of RAM being used by OSX services, etc. is very small for me. Not counting widgets that I'm running, OSX stuff is only using 60MB of real RAM at the moment. So I think your complaint will need to go to the creators of the individual applications. If you think Safari's memory usage is excessive, submit a Safari issue report.
